Ingredients
- 12 oz tortilla-crusted tilapia
- 4 hard tortillas
- 1/2 yellow onion, minced
- 1 jalapeno, minced
- 4 tomatillos, chopped
- 2 tbsp cilantro, chopped
- salt and pepper
Preparation
- Make tortilla-crusted tilapia or saute tilapia in a pan.
- In a bowl, mix together 1/2 of a minced yellow onion, 1 minced jalapeno, 4 chopped tomatillos, and 2 tablespoons of chopped cilantro.
- Season with salt and pepper to taste.
- Crumble the cooled fish in a bowl.
- Split cumbled fish between the four hard tortillas.
- Cover each with the tomatillo sauce, and serve.
