Stuffed Green Peppers in the crock-pot

1 package (10 oz) frozen corn kernels

1 can (15 oz) red kidney beans drained and rinsed

1 can (14.5 oz) diced tomatoes

1/4 cup salsa

1/4 cup chopped onions

1 1/2 cups cooked rice

1 tsp Worcestershire sauce

1/4 tsp salt

1/2 tsp pepper

2 cups shredded reduced fat Cheddar cheese, divided

6 green peppers tops removed & seeded

 Combine all ingredients, except 1/4 cup cheese and green

peppers. Stuff peppers. Arrange peppers in crock-pot.

Cover, cook on low 6-8 hours (high 3-4 hours). Sprinkle

with 1/4 cup cheese during the last 30 minutes. Makes 6

servings.

    Deb, this recipe is very similar to one I have from Weight Watchers called Stuffed Green Pepper Soup. Instead of leaving the peppers whole I cut them into pretty big chucks (there are people out there who do not like peppers-I know its hard to believe) so people can see them. Then I use a little more tomato to make it souper, It is really good. Thanks for reminding me, I am going to make this for potluck tomorrow,
